Knives used during slaughter operations are a form of contamination. Abstract

The study aimed to evaluate the knives, contact surfaces and carcasses for contamination by mesophilic aerobic bacteria and Enterobacteriaceae, in a pig slaughterhouse in the state of Rio Grande do Sul.
