Bacteriocins (nisin, natamycin), plant extracts such as oregano and thyme, as well as native plants of the northeast region of Mexico (Larrea tridentata, Schinus molle, Cordia boissieri, Leucophyllum frutescens), and essential oils of oregano and thyme as antimicrobial agents have been studied.
