RES and HIGH steers had a higher relative weight of the rumen (2.48%) compared to REQ steers (2.24%), resulting in a greater proportion of the gastrointestinal tract (8.25% vs. 7.63%). Carcass characteristics did not differ significantly between treatments (P > 0.05), with an average hot carcass weight and yield of 304.28 kg and 57.80%, respectively. The primary fore, side, and hind cuts represented 39.22%, 10.64%, and 50.67% of the carcass, respectively.
