摘要

本研究的目的是评价巴西南部栽培的野生草莓中的多酚、微量元素和具有抗氧化、抗菌和抗高血压活性的化合物。水果富含纤维、铁、钾和钠。多酚含量为每100g没食子酸当量242.12 mg,单体花青素浓度为每100g花青素3-葡萄糖苷100.50 mg。野生草莓对ABTS•+自由基的清除能力为89%,对DPPH•自由基的清除能力为61%,螯合能力为3.1,对血管紧张素转换酶I活性的抑制能力为12.5%。果实中含有抑制金黄色葡萄球菌、蜡样芽孢杆菌、单核增生李斯特菌和水气单胞菌的化合物。因此,野生草莓是功能性化合物的重要来源,食用它们是促进巴西生物多样性和改善人类饮食的一种方式。
