Food safety is a global priority, since every global citizen has the right to have access to safe and nutritious food. Safe food contributes to people's health and productivity, as well as providing a strong foundation for development and poverty alleviation. Every year, numerous people are affected by foodborne illnesses in developed countries, while widespread illness is even more likely in developing countries. Among society's major concerns are the health risks posed by microbial pathogens and chemicals in food.
