Infrared measurement techniques of methanolic extracts of Coffee (C. arabica. L) Seeds and peels (unroasted and roasted) include the following functional groups: Phenolic (O-H), Aliphatic- (CH), nitro compounds (CN), Aromatics (C = C) and Aliphatic (C-O). The FTIR method was performed on a spectrophotometer system, which was used to detect the characteristic peak values and their functional groups.
