摘要

目的研究一种绿色、经济、高效的超声/微波辅助提取花青素的工艺。设计/方剂/方法采用响应面法优化提取条件,采用DPPH、ABTS·+、FRAP三种方法对提取的花青素进行抗氧化活性分析。讨论了其在不同温度、还原剂浓度和ph值下的稳定性。采用HPLC-QTOF-MS2对蓝莓中花青素的成分进行了分析。结果最佳提取工艺为超声功率300 W、微波功率365.28 W、料液比30 (g/mL)。可能的结构可以推测为:飞鸽苷-3- o -半乳糖苷、飞鸽苷、矮牵牛花苷、飞鸽苷-3- o -葡萄糖苷、矮牵牛花苷-3- o -葡萄糖苷、花青花苷-3- o -葡萄糖苷。结果表明,该方法可在较短的提取时间内提高花青素的提取率,并具有较高的提取活性。本研究为从蓝莓中提取花青素并研究其理化性质提供了一条有前景的可行途径,最终促进蓝莓花青素的开发利用。
