Although the yield of carrot sprouts was not significantly increased, the concentration of total mineral and total free amino acid of a few sprout samples were raised with illite treatment. Furthermore, the content of functional amino acids like γ-amino-n-butyric acid was improved in the illite-treated carrot sprouts. 摘要

胡萝卜(Daucus carota L.)是一种经济上重要的蔬菜作物,含有几种促进健康的植物化学物质。胡萝卜籽提取物有助于保护心脏,调节肌肉收缩,调节总胆固醇和甘油三酯高密度脂蛋白和极低密度脂蛋白。本研究的目的是考察不同浓度的伊利石溶液对胡萝卜种子的催熟效果。伊利石处理虽然没有显著提高胡萝卜芽的产量,但提高了部分胡萝卜芽样品的总矿物质和总游离氨基酸浓度。此外,伊利石处理后的胡萝卜芽中γ-氨基正丁酸等功能氨基酸的含量也有所提高。结果表明,伊利石处理是提高胡萝卜芽品质的良好选择。
