The alkaline protease treatment resulted in increased contents of free amino acids, total polyphenol and total flavonoid compared to control group. The silkworm hydrolysates showed excellent antioxidant activities in various in vitro models such as 2,2 diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, 2,2 - azino-bis(3-ethylbenzthiazoline-6)-sulfonic acid (ABTS) radical scavenging activity. 摘要

研究了蚕粉经蛋白水解酶处理后的抗氧化活性。采用BCA法、Bradford法和sds -聚丙烯酰胺凝胶电泳法(PAGE)测定了蚕粉的总蛋白含量,碱酶处理条件包括温度和pH,确定了碱性蛋白酶处理蚕粉的最佳条件为60℃、pH 7。碱性蛋白酶处理使游离氨基酸、总多酚和总黄酮含量高于对照组。家蚕水解产物对2,2 -二苯基-1-吡啶肼(DPPH)自由基的清除能力、2,2 -氮基-双(3-乙基苯并噻唑-6)-磺酸(ABTS)自由基的清除能力等体外实验均显示出良好的抗氧化活性。这些结果为蚕粉作为功能性食品的原料和利用碱性蛋白酶处理提高原料的可提取性和生物活性提供了有益的信息。
