But infrared spectroscopy technology has produced a large number of data, common data analysis methods cannot be analyzed, chemometrics can solve this problem. In recent years, the combination of infrared spectroscopy and chemometrics has made some progress in qualitative and quantitative analysis of mushrooms. In this review, the basic principle of infrared spectroscopy and chemometrics are introduced, and their typical applications in different directions of mushrooms are summarized. Application of infrared spectroscopy combined with chemometrics in mushroom
