Hasil penelitian menunjukkan tingkat kesukaaan masyarakat terhadap produk olahan Nata de coco sebesar 76%, namun berbanding terbalik dengan pengetahuan masyarakat dalam membuat produk olahan makanan ini. Kabupaten Sumba Timur memiliki potensi yang baik dalam pengembangan air buah kelapa tua (limbah) menjadi produk olahan makanan Nata de coco yang bermutu tinggi.AbstractThe purpose of this study was to describe the potential for developing old coconut water into Nata de coco in East Sumba Regency. The research method used survey method, data analysis used quantitative descriptive. Data collection techniques: interviews, observation and questionnaires. The results showed that the level of public preference for Nata de coco processed products was 76%, but it was inversely proportional to people's knowledge in making this processed food product.
