Enzymatic hydrolysis of the proteins extracted from these cakes was performed using commercial proteases, including Amano Protease P and Amano Protease M. This was the first study to quantify the amino acids in the reaction products. The results were also compared to the hydrolysates obtained using 6 M HCl.
