Industria de laticinios : organizacao do trabalho e qualificacao

Abstract

This article aims to describe production organization and how workers are qualifi ed in dairy industries in the southwest region of Bahia, Brazil. It presents results from a broader research carried out by the Study and Research Group: Work and Education at the Pedagogical Museum of the UESB. The redefi nition of worldwide regulatory standards in food production, as a consequence of the structural transformations of capitalism, brings consequences for the working processes in the dairy business. In this paper, we show how these changes take place in dairy industries. We emphasize, that in terms of the different technological levels of companies, workers have low levels of formal education and learn their craft on the job.
