Microcapsules containing E. globulus essential oil were made by a complex coaservation method using an alginate-gelatin coater. GC-MS measurements of commercial E. globulus essential oil showed its main components were 63.69% miristat isoprophile and 1.8-sineol at 29.35%. Microcapsules were prepared in two samples, which were differed by the use of E. globulus oil in Sample I 4 g and Sample II 6 g. The average size of microcapsules Sample I was 1.550 µm and Sample II was 1.154 µm. Oil content (OC) and encapsulation efficiency (EE) were respectively, OC 78,70%; 42.49% and EE 75.19%; 51.54%. The microcapsules morphology of Sample I looks more rounded than Sample II. Antibacterial test results against S. aureus were higher than against E. coli.
