Abstract
This paper fabricated a new kind of pea protein isolate/Zein-carboxymethyl cellulose composite coating material with Pickering emulsion morphology through the solution blending method. The pea protein isolate/Zein-carboxymethyl cellulose composite coating material exhibited high antibacterial properties, delayed spoilage, and easy-to-coat and easy-to-clean properties.
