To effectively protect these bioactive compounds, this study developed a simple method to prepare pea protein isolate-polylysine (PPI-PL) complex particles using electrostatic interactions, hydrophobic interactions, and hydrogen bonding between the two components. The emulsions prepared with these complex particles demonstrated excellent storage stability (up to 30 days), pH stability (acidic, basic, and neutral conditions), and stability under high ionic strength (7000 mM) conditions. Furthermore, the emulsions improved the protection of active substances (such as astaxanthin) against environmental stressors like oxygen and UV light, and also exhibited significant antibacterial activity against E. coli and S. aureus.
