In this study, we explored the aroma components of two rarely investigated Chinese desert truffles, namely <i>Mattirolomyces terfezioides</i> and <i>Choiromyces cerebriformis</i>, using headspace solid-phase microextraction (HS-SPME) coupled with gas chromatography-mass spectrometry (GC-MS). Our investigation revealed the significant presence of sulphur-containing volatiles in the aroma of <i>M. terfezioides</i> but not in <i>C. cerebriformis</i>. Abstract
