The result of FTIR for two type of chitosan showed absorption spectrum matching (IR) on 1220, 1020 (cm-1) bands for amide group between 1150, 1020 (cm-1) bands, FTIR result were used for calculation degree of deactylation depending on linear equation by using the band 1320, the molecular weight of extracted chitosan was 77142.57 (Dalton) while the control chitosan was 1000027 (Dalton), and it was from high molecular weight. As for the estimated moisture percentage for extracted chitosan and control were 15.50%, 14.65% respectively, and the Solubility for extracted chitosan and control was 94.18% and 96.85% respectively. Abstract

鲤鱼壳聚糖的提取及其性质的测定与研究
本研究的目的是从鲤鱼鱼皮中提取甲壳素和壳聚糖,根据鲤鱼鱼皮的干重,从鲤鱼鱼皮中提取的甲壳素和壳聚糖的提取率分别为55.75%和3.55%。壳聚糖特性研究表明,对照样品和提取的壳聚糖脱乙酰度分别为82.84%、81.32%。两种壳聚糖的红外光谱结果显示,酰胺基团在1150 ~ 1020 (cm-1)波段上的1220、1020 (cm-1)波段上的吸收光谱匹配(IR),利用1320波段的红外光谱结果根据线性方程计算脱乙酰度,得到的壳聚糖分子量为77142.57(道尔顿),对照壳聚糖分子量为1000027(道尔顿),为高分子量壳聚糖。壳聚糖提取率为15.50%,对照组为14.65%,溶解度为94.18%,对照组为96.85%。壳聚糖提取液和对照液的pH分别为8.2和8.5。
