Pectin acetylesterases (PAEs) affect pectin acetylation as they hydrolyze acetylester bonds and have a role in the amount and distribution of <em>O</em>-acetylation. Several mutant studies suggest the critical role of pectin <em>O</em>-acetylation; however, additional research is required to fully understand this.
