The optimization of the parameters was carried out using the Placket & Burman Design. The process consists of extraction, vacuum concentration, clarification for the mucilage precipitate using 95oGL ethanol; recovering the alcohol by distillation; Spray drying was carried out in batches at a temperature of 145oC, obtaining a tannin concentration of 0,840 mg / mL, with an average yield of dry product of 10,42% based on the raw material in the pod.
