The extraction yield of dietary fiber from jujube residue was higher,and its physicochemical characteristic was good. Abstract

In order to make use of jujube residue, insoluble dietary fiber from jujube residue was prepared by using auxiliary alkal method . The functional characteristics of insoluble dietary were also studied,such as water holding capacity, expansibility and fat adsorption capacity. 枣渣不溶性膳食纤维的制备、表征及其理化性质
为充分利用枣渣,采用辅助碱法制备枣渣不溶性膳食纤维。研究了不溶性饲料的保水能力、膨胀性和脂肪吸附能力等功能特性。通过正交试验得到的最佳工艺参数为:NaOH浓度0.4mol/L、浸泡温度50、8451、65292、浸泡时间120 min、研磨粒度60目、不溶性膳食纤维得率为73.1%。不溶性膳食纤维的持水量为4.9g/g,膨胀性为4.6mL/g,脂肪吸附量为3.2g/g。从枣渣中提取膳食纤维得率较高,其理化特性良好。发展前景良好。
