The functional characteristics of insoluble dietary were also studied,such as water holding capacity, expansibility and fat adsorption capacity. The optimum parameters obtained by orthogonal experiment were as follows:NaOH concentration 0.4mol/L ,soaking temperature 50℃,soaking time 120 min and milled size 60 mesh.Under this condition,yield of insoluble dietary fiber was 73.1%. The water holding capacity, expansibility and fat adsorption capacity of insoluble dietary fiber were 4.9g/g, 4.6mL/g , and 3.2g/g , respectively. The extraction yield of dietary fiber from jujube residue was higher,and its physicochemical characteristic was good.
