Abstract
Process for preparing tomato juice of high consistency which has the feature that consistency is not developed until a later stage in the total process, whereby to obtain savings in power consumption and other advantages. Example: Raw tomatoes are macerated and heated, the macerate is acidified, and juice extracted from the acidified macerate, all these steps being done under conditions which avoid damage to individual fruit cells.
