The effect of pH, temperature, time, aloe gel concentration and the dosage of acid protease was studied. The optimal conditions were that pH was 3.5, temperature was 40°C, the dosage of acid protease was 4%, time was 4h and the concentration of aloe gel was 4.5%. Under the conditions, the amino nitrogen content was 0.197%. The FTIR and amino acid analysis results showed that the peak of C=0 and N-H obviously became stronger. Furthermore, the amino acid analysis results showed that aloe gel hydrolyzate contained 17 amino acids, and proline had the highest content.
