Pathogens identified were: Aspergillus glaucus, Aspergillus niger, Fusarium sp., Penicillium sp., Aspergillus candidus, Cladosporium sp., Alternaria sp. and Aspergillus ochraceus. The results showed that the higher the humidity, temperature, storage time and the incidence of fungi tends to be higher. Fungi with higher presence in sotol seeds were: Aspergillus glaucus and Penicillium sp. Safe storage environments for sotol seeds reported in this work are 5 °C and a relative humidity of 60-75%.
