Abstract

This work was aimed at evaluating the functional properties of six varying percentage blends of locally abundant, under-utilized crops; malted acha (Digitaria exilis), aya (Cyperus esculentus) and ede (Colocasia esculenta) as a substitute for the traditional weaning food.
