The obtained Morinda citrifolia L. juice is stored in a specialized dark PE plastic bottle with a capacity of 1.5 liters and stored at a temperature of 2 - 4oC. Abstract

The technological parameters affecting the recovery yield of Morinda citrifolia L. juice are the concentration of pectinase enzyme, hydrolisis temperature, and hydrolisis time. 影响桑葚汁回收率的工艺参数有:果胶酶浓度、水解温度、水解时间。在此基础上,研究了桑葚汁的提取与回收工艺,工艺参数为果胶酶用量0.4%,水解温度40℃,水解时间240 min,在此条件下桑葚汁的提取率可达90%以上。此外,还确定了回收桑葚汁的压力为200kg\cm2,压榨时间为10 min \批,离心速度为8000 rpm,离心时间为15 min。将获得的桑葚汁储存在容量为1.5升的专用深色PE塑料瓶中,温度为2 - 4℃。采用分析方法测定了桑葚汁的总糖、总蛋白、维生素C等生化指标以及色、香、味、透明度等指标。
