The problem of the research is that the Egyptian potato exports are unstable, which the study attributes to the strong competition in global markets. Therefore, the research aimed to estimate the demand functions for potato exports using the semi-optimal demand model in the Russian market, the Greek market and the Italian market during the period (2005-2020). The results of the study indicate that the most important importing countries for Egyptian potatoes in terms of quantity are Russia, Greece, Lebanon and Italy, with a relative importance of about 33.98%, 9.15%, 8.17%, and 6.99, respectively. The results of the Russian market showed that the price elasticity of demand amounted to -0.787, which means that it is a commodity with inelastic demand in this market, and the spending elasticity reached about 0.487%, which indicates that it is a normal commodity. The price elasticity of demand in the Greek market amounted to about -1.827%, meaning that it is a good with elastic demand, and the spending elasticity reached about 0.771%, which indicates that it is a normal good. It shows the complete acquisition of Egypt for the Lebanese market.
