Ikan gabus merupakan salah satu jenis ikan yang mempunyai kandungan albumin yang cukup tinggi.Penelitian ini bertujuan untuk mengetahui pengaruh cara penyimpanan bahan baku terhadap karakteristik ekstrak protein ikan gabus (C. striata) serta untuk mengetahui pengaruh jenis pelarut terhadap karakteristik ekstrak protein ikan gabus (C. striata). Penelitian ini menggunakan Rancangan Acak Lengkap Faktorial dengan 3 kali ulangan. Faktor pertama pada penelitian ini adalah cara penyimpanan bahan baku (pendinginan dan pembekuan) dan faktor kedua menggunakan jenis pelarut (NaCl 0,9 % dan HCl 0,1 M). Parameter pengamatan pada penelitian ini adalah rendemen, kadar air, kadar abu, kadar protein dan kadar lemak. Data yang diperoleh dianalisis menggunakan ANOVA (Analysis of Variance).Hasil penelitian ini menunjukkan bahwa perlakuan cara penyimpanan bahan baku tidak berpengaruh terhadap karakteristik ekstrak protein ikan gabus (C. striata), sedangkan jenis pelarut berpengaruh terhadap karakteristik ekstrak protein ikan gabus (C. striata). Hasil terbaik dari penelitian ini diperoleh pada perlakuan cara penyimpanan pendinginan dengan jenis pelarut HCl 0,1 M yang menghasilkan nilai rendemen 3,03 %, kadar air 12,42 %, kadar protein 63,33 %, kadar lemak 1,77 % dan kadar abu 22,48 %. Snakehead fish is one of the source of albumin.The aims of this study were to determine the effect of raw material storage on the characteristics of snakehead fish protein extract (C. striata) and to know the effect of solvent type on the characteristics of snakehead fish protein extract (C. striata). This research used Factorial Complete Random Design with three times repetitions. The data obtained were analyzed using ANOVA (Analysis of Variance) test. The treatment in this study was the first cold storage and frozen storage materials, the second treatment using NaCl and HCl solvent type. The parameters observed in this research include yield, water content, ash content, protein content and fat content. The results of this study indicate that raw material storage does not affect the characteristics of snakehead fish protein extract (C. striata), while the type of solvent was significant effect on the characteristics of snakehead fish protein extract (C. striata). The best result of this research that is from cold material treatment with HCl 0.1 M solvent type has a value of 3.03% yield, 12.42% moisture content, 63.33% protein content, 1.77% fat content and ash content 22.48%. Pengaruh Cara Penyimpanan Bahan Baku dan Jenis Pelarut terhadap Karakteristik Ekstrak Protein Ikan Gabus (Channa Striata)
