Saffron's medicinal virtues, ease of use in the kitchen, and its phytochemical profile have led to further investigation of its biological and therapeutic properties. Saffron is rich in carotenoids. Many studies have investigated the effect of saffron and its active ingredients in the prevention and treatment of cancer. Today, the mechanism of action of saffron has not yet been clarified.
