由于儿童食物不耐受的高患病率和诊断困难,目前与儿童食物不耐受形成问题相关[1-3]。环境污染会对食品质量产生负面影响。有相当数量的食品成分是人体在进化过程中不适应的(如稳定剂、防腐剂、转基因脂肪、精制产品等)。儿童具有易形成吸收不良综合征的解剖和生理特征,如消化酶系统启动延迟、胃肠运动调节紊乱、肠道微生物病发育不成熟、肠道渗透率高等。
