Afterwards, all groups were subjected to three drying methods including sun drying (21 days), conventional oven drying (65°C for 24 hours) and vacuum oven drying (65°C for 18 hours). Then, the dried slices were assessed for antioxidants. Results indicated that persimmons subjected to astringency removal pre-treatments and sun dried had the best sensory quality. However, the pre-treatments reduced antioxidant properties as compared to other pre-treatments. 摘要

研究了不同预处理和干燥方法对柿片品质和抗氧化性能的影响。柿子果实在成熟期采收,分为3组:不做任何预处理的对照,切片后用2%蔗糖预处理,切片前用CO2处理去除涩味。之后,各组分别进行日光干燥(21 d)、常规烘箱干燥(65°C 24 h)和真空烘箱干燥(65°C 18 h) 3种干燥方式。然后,对干燥的切片进行抗氧化剂评估。结果表明,祛涩味预处理和晒干处理的柿子感官品质最佳。然而,与其他预处理相比,预处理降低了抗氧化性能。结果还表明,太阳晒干的样品整体质量最好。
