摘要本研究旨在鉴定草莓树(Arbutus unedo L.)基因型果实的酚类物质、挥发性化合物以及有机酸。采用DPPH法、ABTS法和β -胡萝卜素漂白法测定其抗氧化活性,各基因型间差异显著(p小于0.05)。总酚在25.37 ~ 39.06 mg GAE/g干重(DW)之间,总黄酮在3.30 ~ 7.07 mg RE/g DW之间,花青素在0.15 ~ 0.64 mg cya-3-glu/100 g DW之间。DPPH、ABTS和β -胡萝卜素漂白的抗氧化活性分别为3.33 ~ 21.08、2.25 ~ 19.58和1.08 ~ 13 mg抗坏血酸当量/g DW。HPLC法鉴定出17种酚类化合物。没食子儿茶素和儿茶素含量最高。在所鉴定的挥发性化合物中,十六烷酸在所有基因型果实中含量最多。主成分分析表明,前两个分量占总惯性的66.47%。
