The present work aimed to assess the toxicity on DNA and cytotoxicity induced by in ovo administration of synthetic food coloring agents “sunset yellow FCF and tartrazine” with/without curcumin during the organogenesis phase of chick embryo at doses 1.575 mg/egg, 0.375 mg/egg, and 3.0 mg/kg eggs, respectively. The results showed that sunset yellow FCF and tartrazine increased in the level of DNA damage and the percentage of apoptosis. Also, there were a pronounced S phase arrest and a decrease in the number of cells in the G2/M of the cell cycle in the liver and kidneys of the chick embryo treated with sunset yellow FCF and tartrazine. 摘要

近年来,合成食用着色剂的使用得到广泛推广;其对人类健康的潜在毒性也随之增加。本试验旨在研究在鸡胚器官发生期,在蛋内分别以1.575 mg/蛋、0.375 mg/蛋和3.0 mg/kg蛋的剂量给药人工合成食用色素“日落黄FCF”和“酒黄石”加姜黄素/不加姜黄素对鸡胚DNA和细胞毒性的影响。结果表明,日落黄FCF和酒黄石均能提高大鼠DNA损伤水平和细胞凋亡比例。日落黄FCF和酒黄石处理的鸡胚肝脏和肾脏细胞周期G2/M的细胞数量明显减少,S期阻滞明显。另一方面,姜黄素与合成食用着色剂共同给药可积极缓解DNA和细胞周期分布的变化,并减少细胞凋亡。
