Analysis of total anthocyanin content was carried out based on the absorbance value of rice flour extract at a wavelength of 535 nm with a spectrophotometer. This study used a randomized block design with varieties as groups and each was carried out in 20 repetitions. The total anthocyanin content was analysed using a UV-Vis spectrophotometer with an absorbance length of 550 nm and 700 nm. The results showed that there were significant differences in the total anthocyanin content of the four varieties of black rice. 摘要

花青素是黑米中的一种色素,被归类为类黄酮化合物,具有抗氧化特性。本研究的重点是测试印尼4个当地黑米品种的花青素含量,即Toraja(南苏拉威西)、Cempo Ireng(日惹)、Wojalaka(东努沙登加拉)和Manggarai(东努沙登加拉)。利用分光光度计测定米粉提取物在535 nm波长处的吸光度值,对其总花青素含量进行了分析。本研究采用随机区组设计,品种为组,每组20个重复。采用吸收波长为550 nm和700 nm的紫外-可见分光光度计分析总花青素含量。结果表明,4个黑米品种的总花青素含量存在显著差异。黑米品种花青素含量从高到低依次为:Manggarai (1508.89 ppm)、Cempo Ireng (734.86 ppm)、Wojalaka (435.38 ppm)、Toraja (117.2 ppm)。
