The microbial activities decreased during frozen storage. The total bacterial counts were 4.10, 2.11 and 2.71 (cfu×10/g) in the zero, 6 and 12 months for frozen Catfish fillets, respectively. All sensory characteristics except taste and overall acceptability were significantly decreased at the end of the storage period. 摘要

研究了埃及鲶鱼鱼片在-18℃冷冻保存12个月期间的生化测定、微生物负荷测定和感官评价。鲶鱼鱼片的初始化学成分为水分73.01%,蛋白质80.96%,原油09.52%,粗灰分7.30%,总碳水化合物2.11%。冷冻贮藏过程对鲶鱼鱼片的化学成分有显著影响。随着贮藏时间的延长,鲶鱼鱼片的pH值和WHC值显著降低,TVBN值和TBA值显著升高。冷冻贮藏期间微生物活性下降。冷冻鲶鱼鱼片0、6、12个月的细菌总数分别为4.10、2.11、2.71 (cfu×10/g)。贮藏期结束时,除味觉和总体可接受性外,其他感官特征均显著下降。本研究对于解决消费者关于在不损害公众健康的情况下在家用冰箱中保存鲶鱼片所需时间的问题具有重要意义。关键词:埃及鲶鱼,鱼片,冷冻贮藏,品质属性
