This paper investigated the inhibiting effect of natamycin on Saccharomyces cerevisiaes. The results showed that the minimum inhibitory concentrations of natamycin on Saccharomyces cerevisiae S101 and Saccharomyces cerevisiae S201 were 9ppm and 7ppm, respectively. Natamycin was used to detect the beer spoilage bacteria in the process of beer production.
