Abstract

It is well known that fish scales are composed of collagen covered with calcium salts. In this paper, we report the extraction of biocomposite of collagen and calcium salts from scales of Moroccan sardines for the first time. This biocomposite was extracted from scales of Sardina Pilchardus, in seven steps, using acid solution. The physicochemical studies revealed that obtained biocomposite could have promising applications in the food, medical, pharmaceutical and cosmetic industries.
