The aim of the chapter is to shed light on how food systems are transformed or maintained or destabilized. It does so through an investigation into how deep-freezing experts at the state institute for household research established criteria for evaluating the use of freezing technology, how they worked to stabilize the relationship between technology, users, and foods, and how these experts were vital in promoting such facilities, but also in de-stabilizing them through promoting a new technology: the in-home freezer.
