The process of discontinuous (impulse) supply of the product to the flow heat exchanger is considered. To cool the milk, the heat exchange takes place in three stages: cooling the milk in the \"on-hook\" mode, when a constant supply of the product is carried out; cooling in the \"pause\" mode, when the immobile milk remaining in the cavity of the heat exchanger is cooled by water; Mixing of both portions of milk in a collection milk tank. Theoretically and experimentally it was shown that the cooling of milk in the \"pause\" mode depends on the ratio between the regulating milk volume in the milk collector and the volume of milk communications of the heat exchanger.
