Tujuan penelitian untuk mendapatkan suhu pengeringan terbaik terhadap mutu simplisia rimpang jahe yang menggunakan 2 metode yaitu metode dengan pengeringan sinar matahari dan oven. Pengamatan yang dilakukan yakni parameter spesifik (Makroskopik, Mikroskopik dan Penafisan Fitokimia) dan parameter non spesifik (Kadar Air, Kadar Abu, Kadar Abu Tidak Larut Asam dan Susut Pengeringan). Hasil penelitian dapat disimpulkan bahwa suhu pengeringan yang baik adalah menggunakan metode oven dengan pengeringan suhu 60°C. Hasil penetapan parameter spesifik : Pengamatan makroskopik menunjukkan warna kuning langsat dan kuning kusam, rasa pedas, bentuk serbuk, bau khas jahe menyengat. Pengamatan mikroskopik menunjukkan amilum, pembuluh kayu, berkas pengangkut, periderm, serabut, jaringan gabus tangensial. Pengamatan penafisan fitokimia menunjukkan alkaloid, tannin, polifenol, kuinon, saponin, flavonoid, triterpenoid, monoterpenoid dan seskuiterpenoid. Hasil penetapan parameter non spesifik : Kadar air tidak lebih dari 0,1567% dan 0,1867%, Kadar abu tidak lebih dari 0,81% dan 0,24%, Kadar abu tidak larut asam tidak lebih dari 0,80% dan 0,21%, kadar susut pengeringan tidak lebih dari 0,007% dan 0,008%. \nABSTRACT \nGinger (Zingiber officinale Roscoe) is a type of rhizome that is often used to make raw materials for medicines and herbs because of the high content of essential oils. The research objective was to obtain the best drying temperature for the simplicia quality of ginger rhizome using 2 methods, namely the method of drying the sun and oven. The observations made were specific parameters (macroscopic, microscopic and phytochemical filtering) and non-specific parameters (water content, ash content, acid insoluble ash content and drying shrinkage). The results of this study concluded that the best drying temperature to maintain was using the oven method with a drying temperature of 60° C. The results of the determination of specific parameters: Macroscopic observations showed olive and dull yellow color, spicy taste, powder form, and the distinctive smell of ginger. Microscopic observations showed starch, wooden vessels, transport bundles, periderm, fibers, tangential cork tissue. Observation of phytochemical depletion showed alkaloids, tannins, polyphenols, quinones, saponins, flavonoids, triterpenoids, monoterpenoids and sesquiterpenoids.
