Abstract

In this study, the anti-diabetic and anti-hypertensive properties of wheat (Triticum aestivum) noodles was improved by inclusion of acha (Digitaria exilis) and fig (Ficus exasperata) leaf, which are plants established to have anti-hyperglycemic and anti-hypertensive properties respectively.
