The dispersion having sugar NADES showed higher peak force and energy than acid NADES. The dispersion showed non-Newtonian and pseudo-plastic behaviour and experimental data well fitted with Carreau-Yasuda model. The gum acacia with sugar NADES dispersions exhibited high zero share viscosity and relaxation time.
