The final optimum concentrations of lysozyme, sodium alginate, and chitosan were 0.09, 1.40, and 1.60% and realized the high sterilization rate. Water activity of sliced Larou was significantly correlated with the sterilization rate. Low-field nuclear magnetic resonance analysis verified the optimum processing conditions. The coating resulted in 99.69% rate of reducing bacteria after 30-day storage. 新型天然包衣液对腊肉保鲜条件的优化研究
本研究旨在确定传统腊肉制品(腊肉)在天然包衣液保存下的最佳灭菌率和水分活度。采用响应面法(RSM)分析了溶菌酶浓度、海藻酸钠浓度、壳聚糖浓度等3个工艺条件和灭菌率、水活度等2个工艺条件的影响因素。溶菌酶浓度、海藻酸钠浓度和壳聚糖浓度对Larou的灭菌率和水活度有较大影响。溶菌酶、海藻酸钠和壳聚糖的最终最佳浓度分别为0.09、1.40和1.60%,达到较高的灭菌率。Larou切片的水分活度与灭菌率显著相关。低场核磁共振分析验证了最佳工艺条件。经过30天的保存,该涂层的细菌去除率达到99.69%。菌落总数、过氧化值、水分含量、pH值、感官评价等数据为利用天然包衣液延长腊肉产品(Larou)的保质期提供了理论依据。
