Among food of animal products, eggs are very interesting from the point of view of functionality, because they are as the moderate calorie source, an excellent quality protein, rich in vitamins and minerals, inexpensive and highly nutritious food. The develop of the functional foods from egg-derived by technological methods is interest strategy to enhance profitability of egg producers and food industry and improving public health condition in generally, especially in the developing country such as Indonesia. Abstract
In currently decades, the demand of functional foods is increasing and would increase continuously in the future.
