Objective: To determine the quantity and glycemic index category of nuggets made from a mixture of eel flour and tempeh flour with a proportion of 50%: 50% as nutritional support for diabetic hemodialysis patients. Methods: This experimental study using the one group intervention without control design used objects in the form of nuggets with the proportion of mixing eel flour (Monopterus albus) and tempeh flour by 50%: 50%. The measurement of glycemic index was carried out after respondents consumed test food (nuggets). Blood glucose levels measurement conducted at 30th minute, 60th minute, 90th minute, and 120th minute respectively. Results: The nugget’s glycemic index was 48.06, so it was categorized as a low glycemic index. 黄鳝粉和豆豉粉对糖尿病血液透析患者营养支持的血糖指数
背景:糖尿病是终末期肾功能衰竭的病因之一,也是终末期肾功能衰竭血液透析患者的合并症。糖尿病血液透析患者的糖尿病治疗比较困难。糖尿病血透患者也会因为蛋白质摄入不足,出现恶心、呕吐、厌食等胃肠道紊乱而出现营养不良,因此需要符合糖尿病血透饮食要求的营养支持,即高蛋白、高钙、低磷、低血糖指数,由鳗鱼粉和豆豉粉混合制成的鸡块来完成。目的:确定鳗鱼粉与豆豉粉以50%:50%的比例混合制成的鸡块作为糖尿病血液透析患者的营养支持量和血糖指数类别。方法:本实验采用一组干预无对照设计,实验对象为鸡块,黄鳝粉与豆豉粉按50%:50%的比例混合。在受访者食用测试食物(鸡块)后进行血糖指数测量。分别于第30分钟、第60分钟、第90分钟、第120分钟测量血糖。结果:该鸡块的血糖指数为48.06,属于低血糖指数。结论:鳗鱼粉与豆豉粉配比为50%:50%的硬块为低血糖指数食品,可作为糖尿病血液透析患者的营养支持。
