The globule size, globule number and viscosity of the emulsion were the parameters used to evaluate the stability of the emulsion. Abstract
The emulsifying property of grewia gum in arachis oil emulsion was evaluated. The gum was extracted by maceration, filtration, precipitation and drying techniques.
