This study aimed to determine the content of saccharin in red porridge sold in traditional market and to found out its suitability with the safe limits required in Regulation of the Head of the Food and Drug Supervisory Agency of the Republic Indonesia number 4 of 2014 concerning the maximum limit for the use of sweetener food additives. Identification of saccharin was carried out by resorcinol test and thin layer chromatography. Determination of saccharin was carried out by UV-Visible Spectrophotometric which had been validated at 267.5 nm. The results show that 9 samples of red porridge sold in traditional market contain saccharin with concentrations of 0.0154 – 0.0652 %, so that it exceeds the required safe limit of 0.0100 %. 用紫外分光光度法分析传统市场红粥中糖精的含量
糖精的甜度是蔗糖的几百倍,因此可以节省生产成本。糖精作为一种人工合成甜味剂,在传统市场上具有很大的发展潜力,可用于制作物美价廉的甜味食品,红粥就是其中之一。许多在传统市场销售的食品没有作为家庭工业产品的销售许可证,从而增加了滥用糖精的可能性。本研究旨在确定传统市场上销售的红粥中糖精的含量,并确定其是否符合印度尼西亚共和国食品药品监督机构2014年第4号关于甜味剂食品添加剂使用最高限量的规定所要求的安全限量。采用间苯二酚法和薄层色谱法对糖精进行鉴定。采用紫外可见分光光度法测定糖精,验证波长为267.5 nm。结果表明,在传统市场销售的9份红粥样品中,糖精含量在0.0154 ~ 0.0652%之间,超过了0.0100%的安全限值。在分析方法验证中,获得了在20 ~ 60 μg/mL范围内的选择性方法,回收率为98.7371%,变异系数为0.8671%,相关系数为0.9993,检出限为1 9859 μg/mL,定量限为6.6197 μg/mL
