Salah satu jenis rumput laut yang potensial untuk dikembangkan adalah Eucheuma cottonii. Kualitas rumput laut perlu dijaga dengan cara perendaman dan ukuran partikel bahan bakunya. Penelitian ini bertujuan untuk menganalisis kandungan kimia rumput laut Eucheuma cottonii dengan perlakuan media perendaman dan ukuran partikel yang berbeda. Penelitian ini dilakukan dengan beberapa tahap yaitu preparasi sampel, karakterisasi kandungan kimia bahan baku rumput laut, karakterisasi kimia rumput laut hasil perendaman dan perbedaan ukuran partikel. Perendaman dilakukan dengan menggunakan larutan KOH dan air kelapa. Ukuran partikel terbagi menjadi dua yaitu 30 mesh dan 80 mesh. Eucheuma cottonii asal Sumenep Madura mempunyai kadar air 34,67%; kadar abu 27,11%; kadar lemak 0,64%; kandungan serat kasar 0,06%. Kandungan kimia pada perlakuan media perendaman air kelapa dan ukuran partikel 30 mesh dan 80 mesh yaitu kadar air 12,53–13,71%; kadar abu 23,88–26,7%; kadar lemak 0,848–0,854%; kandungan serat kasar 0,120–0,126%. Kandungan kimia pada perlakuan perendaman larutan KOH dan ukuran partikel 30 mesh dan 80 mesh yaitu kadar air 12,026–13,363%; kadar abu 25,49–28,09%; kadar lemak 0,842–0,844%; kandungan serat kasar 0,128–0,159%. Hasil penelitian ini menunjukkan bahwa rumput laut Eucheuma cottonii mempunyai kandungan gizi yang cukup baik sehingga dapat dimanfaatkan dan dikembangkan dalam bidang pangan fungsional. Seaweed is a marine plant with high use value in various fields, exceptionally functional food and medicine. One type of seaweed that has the potential to be developed is Eucheuma cottonii. The quality of seaweed must be maintained by soaking and the particle size of the raw material. This study aims to analyze the proximate content of Eucheuma cottonii seaweed with different soaking treatments and particle sizes. This research was conducted in several stages: sample preparation, characterization of the chemical content of seaweed raw materials, chemical characterization of soaked seaweed and different particle sizes. Soaking is done using KOH solution and coconut water. Particle sizes are divided into two, namely 30 mesh and 80 mesh. Eucheuma cottonii from Sumenep Madura has a moisture content of 34.67%, ash content of 27.11%, fat content of 0.64%, and crude fiber content of 0.06%. The chemical content in the coconut water immersion treatment and the particle size is 30 mesh and 80 mesh at a moisture content of 12.53–13.71%, ash content of 23.88–26.7%, fat content of 0.848–0.854%, crude fiber content of 0.120–0.126%. The chemical content in the KOH solution immersion treatment and the particle size of 30 mesh and 80 mesh at a water content of 12.026–13.363%; ash content 25.49–28.09%; fat content 0.842–0.844%; crude fiber content 0.128–0.159%.
