The researches were focused on the example of the local origin fruits dehydration, but in particular, peaches were selected as the main object of the research, because they are extremely sensitive to both storage and processing, and the current technologies applied in their case have low efficiency due to adverse reactions that cause processing defects. The essential problems in the dehydration of peaches are the oxidation of the superficial layer and the browning, which considerably reduce the quality of the finished products and also require an increased energy intake, and because of the mentioned shortcomings, these fruits are mainly used during the season, being mainly consumed fresh, nevertheless the dried fruits are of interest and are sought after by consumers the year-around. The main results obtained with the application of the elaborated installation are: increasing in the energy efficiency and the quality of the finished products. 摘要

这项工作的目的是在改良气氛中建立高效节能的水果脱水机制。为实现这一目标,开发了一种实验性电气设备,在技术过程中采用二氧化碳改良气氛脱水法。之所以使用二氧化碳作为干燥剂,是因为它对食品和人体无害,甚至对儿童也无害,而且常用于食品工业。研究以本地水果脱水为例,但特别选择了桃子作为主要研究对象,因为桃子对储藏和加工都极为敏感,而目前应用于桃子的技术由于不良反应导致加工缺陷而效率低下。桃子脱水过程中的主要问题是表层氧化和褐变,这大大降低了成品的质量,而且还需要增加能量摄入。由于上述缺点,这些水果主要在当季使用,以新鲜食用为主,但干果却很受欢迎,全年都受到消费者的追捧。应用精心设计的装置所取得的主要成果是:提高了能源效率和成品质量。这些成果的意义在于解决了水果脱水过程中的基本特征问题,而这些问题正是相关领域的专业公司目前所面临的。
