Among those, seven volatile compounds (pentadecane, octadecane, γ-dodecalactone, dodecanal, (<em>E,E</em>)-2,4-heptadienal, 2-heptanone, and ethylbenzene) were selected as significant contributors to the fishy off-flavour fingerprint, all being related to lipid oxidation.
